Grilled spiced chicken thighs served with a peanutty coconut gravy. A dish I learnt to cook with Chef Fairuz from Temple Tree in Langkawi a few summers ago. The chicken is marinated with a blend of lemongrass, galangal, ginger and coconut milk before being grilled and doused in a rich, sweet and savoury sauce. Each region has it's own version of Ayam Percik and this one is delicious.
