Traditionally this dish is made with boiled eggs but as usual I have put a Ping twist on it only because I think it is much more fun to eat! 
Sweet English garden pea and green bean frittata cooked in a creamy aromatic coconut broth flavoured with chillies, lemongrass, galangal and kaffir lime leaves. Remember to mash the eggs into the rice!
