Literally translated as “Onion Chicken,” Ayam Bawang is a beloved staple of Penang’s Nasi Kandar shops. Tender chicken enveloped in a rich, aromatic gravy of ground spices, sweet Kecap Manis and plenty of caramelised onions. Bold, warming and deeply savoury, the onions bring a decadent sweetness that balances the spice beautifully. We then add roasted potatoes to cut through the richness and top it with crispy shallots for texture.
